What is good for the soul!

What is you New Year resolution? Healthy cooking maybe? So I was STUCK in the greatest of crockpot country and was not home at all for the past few months so inspired! I made "healthy" chicken soup. (warning it does get "mushy" but still taste great. Its a trade off. Cooked carrots or over cooked noodles? I'll take the carrots and Germany for the noodles being slightly mushy and lets call them Badische Schupfnudeln ! LOL)


~Boneless/Skinless Chicken (Add to crock pot) I use chicken thighs They are cheaper and the meat is tender.
~Baby Carrots (dice)
~Celery (Dice)
~Mushrooms (sautéed with onions)
~Thyme
~Bay Leaf
~Chicken
~Celery
~Parsley
~Salt and Pepper to TASTE!
~Bowtie Pasta
~Baby Kale
~Chicken Stock

CROCK POT!

Hint....Drop noodles late.....or serve over pasta for a more al dente.
